I. BACKGROUND
In 2009, Vietnam food market witnessed many complicated changes. Global economic crisis and complicated fluctuations of domestic economy affected widely food supply and demand. Prolonged inflation, gasoline pricehike as well weak food hygiene caused domestic food market to become complicated. By 2010, national economy has seen good growth, strong penetration of some foreign retail systems into Vietnam has made domestic food market open many opportunities as well as challenges for food enterprises. In a bid to deal with risks of market, and take full advantage of chances for development, food producers, processors, distributors and enterprises must have suitable business strategies both in short term and long term. Thus, consumer information with indicators: food demand, behavior, habit and changes in food consuming behavior before market fluctuations; factors affecting consumer behaviors is the important condition for enterprises to make suitable business strategies.
However, up to date, there has not been any research on direct evaluation of consumers on their food demand and consumer behavior when the market has had many fluctuations. Only some foreign enterprises or large enterprises which have enough economic potential implement this activity, however, they have owned these results and not shared with other competitors such as small and medium food enterprises in agriculture and rural sector.
Accordingly, at present, providing information on food demand, behavior, and habit of consumers for small and medium food enterprises in agriculture and rural sector is an urgent activity.
